Japan is famous for its highball culture and this cocktail from the rooftop bar at QT Newcastle honours that history, whilst providing a unique twist.
Harajuku Highball
Ingredients:
- 45ml Suntory Toki Whisky
- 30ml Umeshu
- 10ml Lemon juice
- 20ml Plum steeped sugar syrup
- A top of shiso leaf infused soda water
- Shiso sprig and dehydrated plum wheel (to garnish)
Directions:
- Add all ingredients apart from soda water to a cocktail shaker
- Add ice and shake hard for 15-20 seconds
- Strain into an ice-filled highball glass
- Top with shiso-infused soda water and stir gently to combine
- Garnish with plum wheel and shiso sprig
