After over three and a half years at the helm of one of the country’s best loved cocktail bars, co-owner and general manager Adi Ruiz has announced that he is going to “retire to country life and rest my wounded joints”.
While Ruiz will still be an active member of the Bulletin Place team until the end of June, word on the street is that he will be taking the “opportunity to work closer to nature in Tasmania”. Despite the tree-change, he will continue on as a director of the bar.
To fill his rather large shoes, the Bulletin Place team has recruited Paul Hammond (recently The Beaufort and Seamstress, Melbourne), one of the country’s leading cocktail minds to take the reins.
Hammond will join the Bulletin Place team from next week, and from the start of July take over as the bar’s general manager.
According to the team, Hammond brings over a decade of experience in some of the world’s best bars, including successful stints with London’s Match Group, a tenure at the award winning Melbourne-bar Seamstress, and a period at the double‐hatted restaurant, Rosetta.
Hammond says that he is very excited to have been given the chance to join what is already a stellar team in one of Australia’s best venues.
“I’ve worked with Adi before and know that he will have created an incredibly high standard for me to follow on from. It’ll be a huge challenge,” says Hammond. “But I’m going to relish the opportunity to help usher Bulletin Place into its next exciting chapter.”
Bulletin Place has won a plethora of awards since opening including: Time Out Sydney Bar of the Year 2013; Time Out Sydney Cocktail Bar of the Year 2013/2014; Good Food Bar of the Year 2014; and snagged spot #28 on the World’s Top 50 Best Bars list. They have also been nominated for the Spirited Awards in 2016 in the Best International Cocktail Bar category.
