Patient Wolf Distilling Co. will open a new distillery and bar in Melbourne’s Southbank in early September.
When it opens, Patient Wolf says its new home will be the largest independent distillery in Victoria.
The distillery is currently based in Brunswick, but co-founders and distillers of Patient Wolf, Matt Argus and Dave Irwin, (left and right above) are currently renovating a red brick industrial warehouse at 34-36 Market Street, an inner-city side street which straddles the Southbank and South Melbourne border.
The pair’s new venue will offer guests the opportunity to taste Patient Wolf gins from a new world-class bar, go behind the scenes at the fully functioning distillery, and join intimate gin masterclasses to learn more about the distilling process.
The 30-pax venue will offer a seasonal drinks menu featuring gin and tonics, classic cocktails such as a negroni or a gin martini, alongside more experimental gin combinations, each with a distinctly Melbourne style. Patient Wolf gins will also be available for retail, including limited-edition and distillery-only releases.
The urban distillery will be the new home for Patient Wolf’s existing 220L Müller copper still (considered the ‘Bentley’ of stills), with a state-of-the-art 1000L still due to arrive from Germany and join production early next year. When the new still arrives, the Patient Wolf distillery is expected to be Australia’s largest urban gin distillery.
Founded in 2017, Patient Wolf currently produces three gins: Melbourne Dry Gin, Summer Thyme Gin and Blackthorn Gin – a season release featuring blackthorn (sloe) berries handpicked in Tasmania.
The Patient Wolf Distillery and bar will be open Thursdays and Fridays 4-6pm and Saturdays and Sunday 10am-5pm.
