The Pub Leaders Summit returns to Sydney on Monday 30 March, and will be offering up plenty of inspiration for operators of any licensed venue, not just pubs.
There are several sessions throughout the day that would be of particular relevance to small bar operators, including ‘The New F&B’, a panel session focused on the current and emerging in patron behaviour and expectations in the F&B space. Among other things, the session will look at the rise of the sophisticated non-alc option, and how venues are incorporating these into their offerings.
Panellists for the session include Stephanie Haile, ALIA-nominated bar manager who has worked at several Merivale venues, and is currently looking after The Paddington. Joining her are Rose Kentish, co-founder of Sparkke Beverage Company; Marcello Colosimo, CEO of Momento Hospitality (whose venues include the recently opened Sarino’s fine-dining restaurant, bar and micro-distillery); and Toby Chick, GM of the award-winning Hotel Rose Bay.
‘Let Us Entertain You: A Changing Landscape’ is another panel that small bar operators should take advantage of, as the likes of Kerri Glasscock (Sydney Fringe Festival), Matt Rule (Music + Booze Co), Ed Loveday (Solotel) and Janenne Willis (Hotel Esplanade), discuss the increasing importance of an entertainment offering in any nightlife operation – particularly in convincing people to leave the comfort and convenience of their homes.
There will also be several insightful presentations made throughout the day from people outside of the industry, including a case study into F&B sustainability strategies by Alice Dahlberg, sustainability officer for Spicers retreats. Dahlberg will discuss how the company went about getting to zero net waste in its kitchens, what went wrong, its successes, the strategies its looking to implement next.
Greg Daniel of KPMG, one of Australia’s most experienced marketing communications executives, will be presenting on social media intelligence and actionable customer insights – crucial to any small bar business. Stevan Premutico of me&u, who has partnered with the likes of Merivale and Solotel, will run through changing consumer trends within the hospitality industry.
