Hunter St. Hospitality opens new bar, Alice

With twists on classic cocktails, and a champagne list that numbers over 30, Alice is the latest up-market venue to open in the Rocks.

Located beneath the heritage-listed former bond stores of 16 Argyle Street, Alice is described as an ‘elegant cocktail bar,’ and is backed by the same team that operates Rockpool Bar & Grill, and Spice Temple.

Guest enter the venue via a stairwell lined with velvet curtains, arriving at a bar decked in jewel-toned fabrics. The decor has been created in partnership with People of Design, an interior design agency based in Brisbane.

Hunter St. Hospitality Chief Executive Officer Thomas Pash expressed his delight at adding a premium cocktail bar to the group’s portfolio.

“We have had our sights set on a high-end cocktail bar for some time, one that draws inspiration from the world’s best bars and the food offerings of our own premium restaurants, Rockpool Bar & Grill and Spice Temple,” Thomas said.

“The Rocks is enjoying an incredible revival and it’s exciting to be contributing to the drinking and dining buzz with an incredibly unique destination like Alice.”

Alice’s cocktail menu includes ‘the Alice Spritz’, a combination of Cocchi Americano, prosecco and raspberry shrub, alongside ‘the Nitro Spumoni’, which contains Campari, saffron tincture, a reduction of tonic and ‘nitro grapefruit’.

Alongside the large Champagne collection is a range of European and Australian wines, including biodynamic, organic and vegan bottlings.

Intriguingly, Alice is reviving the traditional punch service, with Bolero Punch, and Peach and Myrtle Punch served in crystal glassware. No and low alcohol beverages are also available.

The bar’s food offering includes a caviar service with tater tots and crème fraiche, beef carpaccio and scallop crudo.

It’s not all raw though, with a small plates menu consisting of: chicken liver parfait profiteroles, fried chicken with Sichuan salt and D.C.P mayonnaise; smoked trout dip with Byron Bay seeded crackers; beef empanadas; and buffalo mozzarella with grilled pear and vincotto. There’s also a more substantial selection of sandwiches.

Alice has room for 65 seated patrons, and is due to open in mid-September, 2022.
