As part of a collaboration with Hickson House Distilling Co., Gowings Bar in Sydney is currently serving up three Hickson House Martinis, crafted to highlight the distinctly Australian characteristics of Hickson House’s signature gins.
Speaking about the collaboration, Gowings Bar Manager, Jackson Bradford, said: “Martinis can be an acquired taste for some, so it was all about providing an exciting flavour and visual profile to steer our guests in taking the plunge and identifying something new with versatile, great tasting gins.”
Seven Spice Martini
To be served in a Nick and Nora glass with a blood orange garnish

Harbour Bridge Martini
To be served in a Nick and Nora glass with a lemon twist
Ingredients:
- 60ml Hickson House Harbour Bridge Gin
- 5ml dry vermouth
Oyster Shell Martini
To be served in a Nick and Nora glass with a lemon twist
Ingredients:
- 60ml Hickson House Oyster Shell Gin
- 5ml olive brine
