Spring into whisky: Embrace warmer weather with Aussie whiskies

Warmer weather Aussie whisky

By George Bekarian, Head Mixologist at Cardea & Spirit Specialist for Barrel Lane Whisky Club

As the temperature rises and we shift from the chill of winter into the warmth of spring and summer, many people naturally think of lighter beverages — gin and tonic, refreshing spritzes, or crisp beers. But whisky lovers, take heart.

Spring is an underrated season to explore whisky, particularly when you turn your attention to the bright and lively character of Australian whiskies, which are crafted to suit our unique climate. So, how can whisky become your go-to drink for the warmer months? Let’s dive into why whisky works in spring and summer, some refreshing serving styles, and which Aussie whiskies should be on your radar this season.

Why Whisky Works in Warmer Weather

Whisky may conjure images of cosy winter nights, but it can be a perfect partner for warmer weather as well. The key lies in the complexity and versatility of whisky — particularly the lighter, fruitier styles or those finished in wine casks that bring a fresh, bright character to the palate. Australian whisky, with its unique terroir and often lighter, more approachable profiles, lends itself beautifully to this seasonal transition.

The warm Australian climate helps the ageing process, producing whisky with intense and a rich character, even at younger ages

In spring, the focus is on balance and refreshment. Instead of the heavy, peaty whiskies suited to winter, whiskies with floral, fruity, and honeyed notes are ideal for spring and summer sipping. The natural sweetness of many Australian whiskies, often complemented by maturation in wine or port casks, can offer a refreshing alternative to the more robust flavours of Scotch.

Australian Whiskies Perfect for Spring

Australia’s whisky scene is thriving, and many local distilleries are producing whiskies that are perfectly suited to warm weather. From Tasmania’s cool-climate whiskies to South Australia’s bolder, peated spirits, there’s something for every whisky lover to enjoy as the days grow longer.

Here are a few standout Aussie whiskies that are worth exploring over the spring and summer:

1. Lawrenny Homestead

A delicate union of American Oak and French Oak layered over our spirit’s bounty of tropical fruit notes. Homestead is a triple cask matured release where maturation has occurred across a combination of ex-bourbon, port and sherry barrels to deliver a unique single malt whisky.

Homestead invites you in with a nose reminiscent of fresh rain and blooming florals. The palate is structured and nuanced as white peaches give way to banoffee and candied ginger. Smoked almonds drizzled in golden syrup complete the long, smooth finish.

2. Amber Lane Alchemical Series – Air

The Alchemical Series from Amber Lane is an exploration of whisky through the elements, and ‘Air’ offers a delightful spring experience. This single malt has been elevated with lighter floral notes through time spent in a second-fill ex-Botrytis cask, resulting in an ethereal, delicate whisky that’s perfect for warmer weather. With an ABV of 53.5 per cent, it’s strong yet balanced, and its floral profile makes it ideal for a refreshing whisky highball or simply enjoyed over ice. Notably, ‘Air’ has already garnered accolades, winning Champion Small Batch Spirit and a Gold Medal at the 2024 Royal Australian Spirits Awards.

3. Tin Shed Distilling Co. Iniquity Tunkalilla Whisky

A product of South Australia’s Tin Shed Distilling Co., Tunkalilla Whisky boasts notes of eucalyptus, caramel, and honey, with a gentle peat smoke finish. This whisky’s softer, herbaceous smokiness sets it apart from traditional peated whiskies, making it an excellent companion on spring and summer evenings.

Tips for Enjoying Whisky in Warm Weather

  • Keep it light: Choose whiskies that feature fruit, floral, or honeyed notes. These lighter flavours are more refreshing and enjoyable in warmer weather.
  • Add ice or water: Don’t be afraid to add a splash of water or a few ice cubes to your whisky. This not only cools it down but also helps open up the flavours, making it more enjoyable in the heat.
  • Pick the right glassware: A highball glass or tumbler works well for springtime whisky sipping, especially when served over ice or in cocktails.
  • My personal favourite cocktails: spring is perfect for whisky cocktails (whisky sours-mint juleps-whisky smashes) with fresh citrus and herbs are all great options.
