Sydney-based distillery has added a pair of rum expressions to its Trials and Exceptions range: Refiner’s Molasses 2019 and Mill Molasses Rum 2019.
Trials and Exceptions is described by the distillery as ‘a way for us to share the research and development we do every single day in the distillery, and get the general public involved along the process.’

These two new bottlings are the 12th and 13th releases in the range. They form the conclusion of a three-part mini-series exploring sustainably sourced molasses from NSW, following the launch of Fancy Molasses rum in October.
Both new rums have been made using different kinds of NSW high-test molasses, with Refiner’s Molasses Rum produced with ‘raw liquor molasses’ and Mill Molasses Rum made with ‘B-grade molasses’.
Refiner’s Rum was aged in Apera (Australian sherry) casks for three years, with the final result a rum that offers ‘notes of caramel, sultanas and marmalade – before tapering into dark chocolate and black tea flavours,’ according to the distillery. The spirit is bottled at 52 per cent ABV.
Mill Molasses Rum is said to have been ‘crafted for matured rum drinkers’ – with the rum weighing in at a fiery 67.5 per cent ABV. This spirit was also matured in Apera casks, and Archie Rose describes it as presenting ‘chocolate icing, bread and butter pudding and roasted walnuts.’
Both rums are available through the Archie Rose website. Refiner’s Molasses Rum has an RRP of $149, while Mill Molasses Rum is selling for $199.
