Barrelhouse talk Hickson House at The Bloody Big Drinks Summit

Barrelhouse Group founders Mikey Enright and Julian Train and master distiller Tim Stones have revealed more details about Hickson House, their new distillery and bar, which is set to open in November in The Rocks area of Sydney.

Hickson House Distillery Co will produce gin and whisky predominantly but also some aperitifs and brandies, along with other “cocktail ingredients”.

The distillery will feature a 2,500 litre whisky wash still, a 1,300 litre spirits still and an 800 litre gin still, sourced from Griffith still maker Mark Burns.

Mikey Enright and Julian Train, along with Hickson House head distiller Tim Stones, discuss the mammoth project in an online presentation for the Bloody Big Drinks Summit, which you can watch from 25 October.

The discussion ranges widely from the challenges of building a distillery inside a heritage building to the diversity of Australian botanicals.
