Experimental yeast key to the Nikka 2022 Discovery Series

Nikka Whisky has unveiled its 2022 Limited Edition Discovery Series, which is described as an ode to flavours, aromas and the use of experimental yeast.

The liquid in each bottle has been developed by more than 100 different yeast cultures sourced from around the world, and cultivated in house by Nikka.

In a statement about the release, Nikka said: The process of yeast cultivation, as well as understanding the final impact a culture might have on a batch of whisky, requires patience and discipline, with the blenders analysing and tracking each spirit batch through the maturation process. Changes are then documented throughout the decades.

“Nikka’s constant exploration with whisky continues to drive new expressions and aromas. It is this innovation that drives whisky admirers to each year’s release, with the 2022 iteration artfully blended from barrels chosen for their rare flavour profiles derived from the yeast cultures used and blended to create the exclusive 2022 Limited Edition Discovery Series.”

The Series comprises Yoichi Single Malt Aromatic Yeast, from Yoichi Distillery in the north of Japan and Miyagikyo Single Malt Aromatic Yeast.

The yeast profiles from Miyagikyo Distillery have been maturing in a glen surrounded by mountains and at a junction of two pristine rivers, with a key component of the liquid being distilled in the 1980s and no longer produced.

Miyagikyo Single Malt Aromatic Yeast expresses a rich, fruit forward aroma of blended peaches and apricot (47 per cent ABV).

Yoichi Single Malt Aromatic Yeast is blended from a maturation that has a fresh estery aroma reminiscent of ginjyo sake. The blend includes batches that were initially abandoned due to the distinctive flavour profile, though after barrel maturation, this flavour is now recognised as essential to the batch.

Only 20,000 bottles of the Discovery Series will enter the international market, although it is available to Australia’s whisky and cocktail bars.
