It’s Summer O’Clock at Hickson House

Hickson House Distilling Co is marking the start of summer with a new, fruity cocktail menu, new gin-centric experiences and extended opening hours.

Back by popular demand, last summer’s Wild Rosé Summer Cup has joined Hickson House’s permanent range. After winning both Gold and Best in Class (Flavoured Gin) at the Australian Gin Awards 2023, the contemporary Australian twist on classic British fruit cup aperitifs is also debuting nationwide at leading bars and independent retailers.

Along with the return of the Wild Rosé Summer Cup is a new menu of food and cocktails. Highlights from the new cocktail menu include Summer Freeze, a gin frosé, Sunny Spritz, made with Wild Rosé Summer Cup, vanilla and passionfruit soda, and Summer Cup, also comprising Wild Rosé Summer Cup with ginger ale, fresh strawberry, cucumber and mint, and a range of Hickson House G&Ts.

Designed to complement the fruity cocktail selection is a menu of fresh food dishes, including tempura spring vegetables with soy and pickled ginger, chargrilled pineapple salad with pickled ginger, fetta and dukkah, and a trio of native sorbets with toasted macadamia.

Making a conscious effort to minimise environmental impact, Hickson House uses locally-sourced ingredients and native botanicals, with stills that are hand-made to order in Griffith. Hickson House is now giving customers the option to bring back their used Hickson House gin bottles to be refilled or exchanged for fresh ones, while also utilising gin-steeped muntrie berries left over from distillation in its house-made Summer Cup.

Hickson House owners Mikey Enright and Julian Train said: “We love The Rocks, and hope our new, wider offerings and all-day opening are a welcome addition to this historic neighbourhood. Summer O’Clock is our way of saying we now have something for everyone, no matter what time of day.”

As part of its invitation for customers to explore Hickson House’s range of award-winning gins, the Distillery Door Manager will now be hosting tasting flights in the distillery between 10am and 4pm every day at $10 per person, with the cost redeemable off any bottle purchase.

Additionally, Hickson House is now offering Bottomless Gin Brunches, including a gin tasting, summery food dishes and bottomless Summer Cup jugs and G&Ts.

Easing from long summer days into warm summer nights, the venue will now open at 10am daily.
