Michelin-star winning chef, Simon Rogan, is bringing his acclaimed restaurant L’Enclume to a residency at Bather’s Pavilion, Balmoral and is offering a fully immersive, once-in-a-lifetime dining experience to passionate hospitality talent.
During the residency two chefs tables, on Thursday 27 July and Tuesday 9 August will be dedicated to passionate and driven young people in hospitality who are 30 years of age and under who want to learn from and interact with Simon Rogan and his team.
The experience will be open to up to 20 people across the two dates and include lunch at the chef’s table with Simon and his chefs introducing each course, time in the kitchen at the end of the meal, and conversations around three-Michelin starred dining and development, sustainable gastronomy, the future of food and the role hospitality professionals play in the future.
Rogan said: “We are passionate about developing skills and sharing knowledge and are looking forward to meeting some of Australia’s brightest young hospitality minds who are hungry for a long-standing career in the industry.
“This initiative here with Bathers’ is a continuation of the work that takes place as part of the Simon Rogan Academy, where in the UK we offer an opportunity to those who are seeking a career in the restaurant industry with an 18-month apprenticeship within our Lake District restaurants, which then culminates in a stage at our restaurants in Hong Kong.”
To earn a seat at the table you will need to submit an email application of up to 250 words detailing your hospitality aspirations and why you would like the opportunity to dine at the L’Enclume Residency and meet Rogan and the team.
Submissions can be made at residency@batherspavilion.com.au from Tuesday, 20 June, closing on Monday, 10 July and the winners will be announced on Friday, 14 July.
