Sydney’s first vermouth bar Banksii to be reborn

Sydney’s first vermouth bar, Banksii Vermouth Bar & Bistro will close its doors at the end of May, but it’s not the end of the road for owners Rebecca Lines and Hamish Ingham.

The pair will be swapping the vermouth for tequila and open a new Mexican-inspired concept, Tequila Daisy. Banksii is approaching its fifth birthday and the Rebecca and Hamish said they were ready to embrace a new adventure.

Co-Owner and Sommelier of Banksii, Rebecca said: “Banksii has enabled us to invite Sydneysiders to dine at our Mediterranean table and develop an understanding and appreciation of the aromatic flavours of vermouth. Hamish and I have never been ones to sit still, and our penchant for change continues to inspire us to have fun and mix things up.

“The last 12 months have given us the freedom to experiment and explore our obsession with Mexican-inspired flavours. We’re excited to be able to share what we’ve been working on with the opening of Tequila Daisy in August.”

Banksii will be taking final bookings until Sunday 30 May, and stay tuned to Bars and Clubs for more details regarding Tequila Daisy as its opening approaches.
