Alex Boon (Pearl Diver Cocktails and Oysters) shared the cocktail recipes that saw him win the Australian Patrón Perfectionists Competition to become national champion.
First up, Alex’s ‘Hometown Hero’ entry, ‘Frankie’.

Frankie
Ingredients:
- 50ml Patrón Silver tequila
- 20ml good quality Oloroso sherry
- 17.5ml Tasmanian honey
- 60ml Uncle Tobys Oat horchata
- Pinch sea salt
- Aleppo pepper infused dark chocolate (garnish)
Directions:
- Add all the liquid ingredients to a milkshake maker
- Whisk with a small amount of crushed ice
- Strain into a highball glass over cubed ice
- Garnish Aleppo pepper infused dark chocolate piece
In the next round, Alex had to produce his ‘Masterpiece’ – ’60 Hands Highball’.

60 Hands Highball
Ingredients:
- 45ml Patrón Silver tequila
- 15ml mango liquor
- 20ml lacto-fermented mango syrup
- 15ml verjuice
- 60ml clarified mango juice
Directions:
- Serve carbonated and over ice in a highball glass
- Garnish with a mango three-ways sphere
